Karen: I became vegan in January 2010 after watching Food, Inc. It was that and reading the China Study and then watching the movie Earthlings that made me realize the Standard American Diet (SAD) was not how I wanted to eat. I also didn't want to support the horrific abuse of animals used for food anymore. I had done animal rescue for over 15 years and finally I made the connection that loving one and eating the other just wasn't right. I travel for work so I knew if I could do it, anyone could do it! It can be a challenge, but it's not hard once you get the swing of it. And you'll feel SO much better. I have a Certificate in Plant-Based Nutrition, T. Colin Campbell Foundation from eCornell.
